Where are the black olives? You must never sub out the black olives.
Bison is good. Its just leaner beef basically.
I prefer Elk. Since I moved to Colorado, I have had a huge amount of elk and its my fave, It has twice the amount of protein over supermarket beef. Bison is legit though, but Elk is easier to get a tag for.
I eat a lot of elk. Many of the family hunt so its always available.
